Recipe : Famous Coconut Serundeng ( vegetarian dish)

If you have read the first one, please continue read this recipe. Coconut serundeng or also known as abon coconut, is a topping dish that familiar to find in indonesia. Coconut serundeng usually used as topping for white sticky rice, fried chicken and many more. Now lets make your own coconut serundeng!
Main Ingredient :
- 500 gr harsh grated coconut
- 5 tbsp oil for stir fry.
Ground Spices :
- 3 tbsp sliced shallots
- 2 tbsp sliced garlic cloves
- 1 tbsp roasted coriander
- 1 tbsp salt
- 2 tbsp dried chili
Other Spices :
- 2 indonesian bay leaves
- 1 slices galangal
- 2 tbsp coconut sugar slices
- 2 tbsp tamarind juice
How To Make :
- Stir fry a ll ingredient on a pan while stir until the coconut grated half dried.
- Toss in 5 tbsp cooking oil. cook until the coconut dried. Drain and remove.
- Press them in a press processor to release the oil.
- Coconut serundeng ready to serve with rice or as topping for white sticky rice.
