Recipe : Famous Yogyakarta Gudeg
When you come to Yogyakarta, there spread lot of food. One of yogyakarta signature dish is Gudeg. Gudeg has the sweet flavor made from young jack fruit with adding hard boiled egg or chicken. This traditional Javanese cuisine is easy to made at home. Now lets make your own Yogyakarta Gudeg!
Main Ingredient :
- 1 kg Young jackfruit
- 1 liter Coconut water
- 2 liter coconut milk
- 200 gr coconut sugar
- 1 galangal ( sliced )
- 5 indonesian bay leaves
- Hard boiled eggs ( suit on taste)
Spice Paste :
- 2 tbsp salt
- 10 candlenuts ( roasted)
- 1 tsp coriander ( roasted)
- 15 shallots
- 10 garlic cloves
- 1/2 tsp pepper powder
How To Make :
- Wash and clean the young jackfruit, drain. Chop into dice shape sizes.
- Boil the youngfruit for a minute, drain.
- Prepare a pot, toss in indonesian bay leaves, galangal, hard boiled egg, coconut sugar and young jackfruit. Then pour half of coconut water. Cook for 2 hours without open the pot cover.
- While waiting,In a food processor or using mortar and pestle, grind all spice into a smooth paste. Then mix the spice paste with the remaining coconut water.
- If the water in the pot already shrink, set a side and take the egg.
- Pour in coconut milk, mix it while smash the jackfruit. Add the egg back until sunken by jackfruit.
- Cook for 3 - 4 hours while stir with low heat.
- If the coconut milk already shrink, and gudeg has turn into red - brown colour, Your Gudeg ready to serve. For more taste, serve gudeg with rice, crackers and fried shallots.
